3 Energy-boosting Recipes To Enhance Your Vitality

These two-step energy-boosting recipes will enhance your vitality so you’re better geared to burn fat and build muscle.

The bulgur and blueberry salad provides a great source of vitamin C thanks to the berries. This vitamin helps guard cells against damage and supports the absorption of iron. Blueberries also boast a good dose of soluble fiber which will help keep your digestive system content.

Bulgar wheat, meanwhile, is a good source of plant protein. It’s low in fat yet high in such minerals as manganese, iron and magnesium.

The orange lentil salad provides a cheap but excellent source of protein. Lentils are also high in fiber, bursting with essential nutrients such as iron and are extremely low in fat.

Bulgur & Blueberry Salad

 

 

Ingredients

• ½ cup coarse bulgur

• ½ cup boiling water

• 3 tablespoons extra-virgin olive oil

• 6 tablespoons fresh lemon juice

• 1 cup chopped arugula

• 4 tablespoons chopped green onions

• 1 medium Lebanese cucumber, cut into small cubes

• 1 medium carrot, cut into small cubes

• ½ cup blueberries

• ½ teaspoon salt

• ½ teaspoon ground black pepper

 

Method

Step 1: Mix together the bulgur and boiling water. Cover and let sit for five minutes, until the water is absorbed.

Step 2: Mix oil, lemon juice, arugula and green onions into the bulgur, and let it sit. Mix in the cucumber, carrot and blueberries and season to taste.

Orange Lentil Salad

 

 

Ingredients

• 7oz split orange lentils, picked over and rinsed

• 2 pinches of salt

• 3 tablespoons fresh lemon juice

• 3 tablespoons extra-virgin olive oil

• 1 clove crushed garlic

• 2 tablespoons chopped green onion

• 2 tablespoons chopped fresh thyme

• 1 Lebanese cucumber, cut into ½ inch cubes

 

Method

Step 1: Place the lentils in a small pot, and cover with water and a pinch of salt. Bring to a boil over a medium heat, then immediately remove, drain and rinse in cold water.

Step 2: Add lemon juice, oil, garlic, mint, parsley and cucumber. Let it sit for 30 minutes at room temperature for the flavors to blend, and season.

 

Banana & Mint Granita

 

 

Ingredients

• 6 medium bananas, peeled, quartered, and frozen

• 2 tablespoons chopped mint

• 4 seedless grapes, frozen

 

Method

Step 1: Remove the bananas from the freezer and defrost at room temperature for one to two minutes. Transfer to a food processor, add the chopped mint and process until smooth.

Step 2: Remove the grapes from the freezer and cut into halves, then slice thinly. Serve the banana purée with a small scoop of ice cream and top with grape slices.
